When Sal and I were planning out these recipes for the Cool, Clam and Connected challenge I said to Sal “Can we have gluten-free white choc and raspberry muffins”.
Sal said to me “Of course, but I don’t actually have a recipe…but I’ll make one up”.
I don’t know about you, but when I get a little too excited in the kitchen AKA me just “making one up”, it normally ends up with my hubby saying “Maybe try a different recipe next time” haha. Which is code word for that was horrible, never make it again!
Sal you are bloody amazing! So cleaver and I can’t WAIT to make these! I’m heading to the supermarket tomorrow to get (all of the correct ingredients) or else my muffins would be blueberry and no choc muffins (and that just sounds shit)! haha.
So enjoy this ripper recipe from the Queen herself Sal! And I can confirm – these on the day of our shoot were unbelievable! I hope mine turn out the same!

Gluten Free White Chocolate and Raspberry Muffins
You only need 35 minutes to make these easy gluten-free white chocolate & raspberry muffins. Soft yet dense just like a GOOD muffin should be & packed full of flavour.
Make a batch today and enjoy all week long.
Makes 12
INGREDIENTS:
- 2 eggs
- 1/2 cup milk
- 2 tsp vanilla
- 1.5 cups almond meal
- 1.5 cups gluten free self raising flour
- 1 cup caster sugar
- 200g white choc chips
- 2 cups frozen raspberries
METHOD:
- Pre heat the oven to 180c fan
- Line your muffin tins with muffin cases
- In a bowl whisk together the eggs, milk & vanilla
- In a larger bowl add the flour, almond meal & sugar & stir together
- Pour in the egg mixture & fold through until just combined
- Add choc chips & raspberries & fold through gently
- Divide between the muffin cases & bake for 25 mins
HINTS & TIPS:
- Don’t over mix!! Fold until just combined. This will prevent a flat over dense muffin
- No gluten free SR flour? Use plain GF flour and add 1 tsp of baking powder
- Dark choc chips also work well in these muffins
